Tofu Avocado Pickle Sandwich on Crunchy Bun

Ingredients

  • 1/2 Avocado
  • 1 tbs Lemon juice
  • Olive oil
  • 1/2 Tomato
  • 2 tbs Mayonnaise
  • 2 tbs Bean sprouts
  • 1/2 Smoked tofu
  • A couple of spinach leaves
  • Salt and pepper
  • Chilli flakes
  • Soy sauce
  • 2 Pickled cucumbers

Preparation

  1. Smash the avocado and sprinkle with the lemon juice

  2. Spread avocado smash on one side of the bun

  3. Spread mayonnaise on the other side

  4. Slice the tomato and top the avocado smash with 2-3 slices

  5. Add your spinach leaves

  6. Sprinkle the bean sprouts on top

  7. Slice the pickled cucumber and lay on top

  8. Slice the tofu and top your bun with it or slice and fry in olive oil and soy sauce before adding to your bun

  9. Sprinkle with chilli flakes

  10. Season with salt and pepper
