Vegan Avocado and Tomato Panini
Ingredients
- 2 slices thinly sliced bread
- 1/2 serving Lupini Bean Seitan, thinly sliced
- 40g avocado, thinly sliced
- 40g tomato, thinly sliced
- 1 slice vegan cheese
- Salt, to taste
Preparation
Assemble all ingredients by layering them between the bread slices.
Sprinkle a bit of salt on the avocado.
Press in a panini press for 1-2 minutes until cheese has melted, or use a grill pan or cast iron skillet as an alternative.
Notes
Use a mandolin to thinly slice the seitan, avocado, and tomato, but handle it carefully to avoid injury.
