Vegan Avocado and Tomato Panini

Ingredients

  • 2 slices thinly sliced bread
  • 1/2 serving Lupini Bean Seitan, thinly sliced
  • 40g avocado, thinly sliced
  • 40g tomato, thinly sliced
  • 1 slice vegan cheese
  • Salt, to taste

Preparation

  1. Assemble all ingredients by layering them between the bread slices.

  2. Sprinkle a bit of salt on the avocado.

  3. Press in a panini press for 1-2 minutes until cheese has melted, or use a grill pan or cast iron skillet as an alternative.

Notes

  1. Use a mandolin to thinly slice the seitan, avocado, and tomato, but handle it carefully to avoid injury.
