Vegan Avocado Pesto Pasta

Ingredients

  • 3 packed cups fresh basil, spinach and kale?
  • few handful of whole black pepper and coriander;
  • 2 tsp cayenne ?;
  • 1/4 cup hemp seeds ;
  • 1/4 cup olive oil;
  • 1/4 cup nutritional yeast ;
  • 2 garlic cloves ;
  • 1 avocado ?;
  • Salt for taste

Preparation

  1. Blend all ingredients for the pesto

  2. Spiralize 4 zucchinis. Add the pesto to the zucchini noodles

  3. Optional, spiralize 2 zucchini with 250g of any gluten free pasta like brow rice or quinoa pasta

  4. Divide into 4 bowls

  5. Garnish with cherry tomatoes, fresh herbs or sprinkle some nutritional yeast for more cheese flavor
