Vegan Avocado Pesto Pasta
Ingredients
- 3 packed cups fresh basil, spinach and kale?
- few handful of whole black pepper and coriander;
- 2 tsp cayenne ?;
- 1/4 cup hemp seeds ;
- 1/4 cup olive oil;
- 1/4 cup nutritional yeast ;
- 2 garlic cloves ;
- 1 avocado ?;
- Salt for taste
Preparation
Blend all ingredients for the pesto
Spiralize 4 zucchinis. Add the pesto to the zucchini noodles
Optional, spiralize 2 zucchini with 250g of any gluten free pasta like brow rice or quinoa pasta
Divide into 4 bowls
Garnish with cherry tomatoes, fresh herbs or sprinkle some nutritional yeast for more cheese flavor
