Vegan Lentil Beet Burgers Dish

Ingredients

  • 1 3/4 cup cooked lentils
  • 1 cup cooked brown rice
  • 1 cup walnuts, toasted
  • 1 small beet, peeled and shredded
  • 1/2 cup gluten free all-purpose flour
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 flax egg, 1 tbs ground flax + 3 tbs water
  • 1 tsp herbs de Provence
  • 1 tsp salt
  • Ground pepper to taste

Preparation

  1. Sauté onion until translucent in a skillet adding water as needed to prevent sticking.

  2. Add garlic and sauté a minute or two more.

  3. Add all ingredients to a food processor and pulse until mixture comes together.

  4. Form six even patties.

  5. To bake, place on a baking sheet lined with parchment or a silicone mat for about 15-20 minutes or until crisp on the edges.

  6. Alternatively you can grill the patties.

  7. Enjoy in your fav bun with lots of fun toppings!

Notes

  1. You can freeze any uncooked patties for a later use. Just defrost prior to cooking or cook longer straight from the freezer. Enjoy!
