Vegan Lentil Burger

Ingredients

  • 1 cup red lentils
  • 2 thyme leaves
  • 1 bayleaf
  • Salt and pepper to taste
  • 2 red onions
  • 100g brown mushrooms
  • 1 glove of garlic
  • 1/2 eggplant
  • 1/2 zucchini
  • 1/2 cup of walnuts
  • 1/2 cup of oats
  • 2 tablespoons of Worcester sauce (adds a meat like flavor)
  • Olive oil or any other kind of oil (best would be a oil free alternative if you have one) for frying the burger Patty's and to use for the stir fry

Preparation

  1. First, rinse the red lentils and bring them to boil along with the thyme and bay leaf and salt for around 10-15 minutes

  2. After they're cooked set them aside

  3. Next, start the stir fry with a bit of oil, and sauté the chopped onions, garlic, mushrooms

  4. Add the chopped up eggplant and zucchini to the stir fry, now spice with a bit of salt and pepper and let it cook until everything soft and done! In a blender add the oats and walnuts and blend them into a flour like consistency

  5. As soon as the stir fry is ready put it in the blender mixture and add half of the cooked lentils (without the thyme and bay leave) into it as well

  6. Add the other half of the lentils to the blender mixture and blend well! Now put in the Worcester sauce and feel free to add other spices or more salt if you think it's neede
