Vibrant Smurf Blue Pancakes with Toppings

Ingredients

  • 1 cup almond milk
  • 1 TBS apple cider vinegar
  • 1 tsp vanilla extract
  • 1 cup plain flour
  • 1 TBS coconut sugar
  • 1 TBS baking powder
  • 1 tsp cinnamon
  • 2 TBS ocean blend powder
  • 1 scoop lean protein powder vanilla (optional)

Preparation

  1. Combine wet ingredients and set aside

  2. In another bowl combine dry ingredients

  3. Then add wet ingredients to dry ingredients and stir just enough so everything is incorporated

  4. Scoop around 1/4 cup of batter and cook on a non-stick pan

  5. Flip when bubbles appear on the top. Repeat until batter is finished.

  6. Top the pancakes with whatever you like, I used coconut yoghurt and blackberries

  7. Maple syrup tastes wicked on these too
