Sweet Potato Quinoa Hash Browns

Ingredients

  • 1 cup sweet potato noodles, cut into small pieces
  • 1 cup cooked quinoa
  • 2 eggs
  • Salt and pepper to taste

Preparation

  1. In a large bowl, whisk together the egg and salt and pepper.

  2. Stir in the noodles and quinoa.

  3. Lightly grease a pan with olive oil and set the temperature to medium heat.

  4. Use a big spoon to make little circles of batter on the pan and cook for 2-3 minutes on each side or until crispy.
