Sweet Potato Quinoa Hash Browns
Ingredients
- 1 cup sweet potato noodles, cut into small pieces
- 1 cup cooked quinoa
- 2 eggs
- Salt and pepper to taste
Preparation
In a large bowl, whisk together the egg and salt and pepper.
Stir in the noodles and quinoa.
Lightly grease a pan with olive oil and set the temperature to medium heat.
Use a big spoon to make little circles of batter on the pan and cook for 2-3 minutes on each side or until crispy.
