Three Bean and Hempe Chili

Ingredients

  • 1 package Hempe
  • 1/2 onion
  • 1 can black beans
  • 1 can cannellini beans
  • 1 can kidney beans
  • 1 can diced tomatoes
  • 1 can tomato sauce
  • 1 tsp liquid aminos
  • 2 tsp ground cumin
  • 1 tsp chili powder
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1 large bay leaf
  • Salt and pepper to taste
  • 1 tsp Cajun seasoning

Preparation

  1. Sauté the Hempe with a bit of cumin, Cajun seasoning, and liquid aminos until browned and set aside

  2. Sauté the onion and once translucent add the beans, spices, and diced tomatoes

  3. Add in the tomato sauce and bay leaf and let simmer for about 20 minutes on medium-low heat

  4. Add the cooked Hempe and mix well and let simmer another 10 minutes before serving

Serving suggestions

  1. Serve with your choice of chopped onions, grated cheese, and/or sour cream
