Traditional Manado Rice Porridge

Ingredients

  • 1 cup rice
  • 250 grams yellow pumpkin, cut into pieces
  • 1 corn cob, grated
  • 2 handfuls lemon basil leaves
  • 2 handfuls spinach
  • 3 bay leaves
  • 2 lemongrass stalks, smashed
  • 2 galangal pieces, smashed
  • 3 shallots, smashed
  • 2 garlic cloves, smashed
  • 1 tablespoon salt
  • 500 ml water

Preparation

  1. Wash all ingredients thoroughly.

  2. For slow cooker method: Place all ingredients except lemon basil and spinach into the slow cooker, add 500 ml water, and set to slow cook for 4 hours.

  3. Add lemon basil and spinach just before serving to prevent wilting.

  4. For stovetop method: Increase water quantity as needed, place ingredients in a pot, and cook on low heat for about 1 hour, stirring frequently to ensure even cooking and softness.

  5. Add lemon basil and spinach at the end of cooking.

Tips

  1. If spinach is unavailable, substitute with water spinach.

  2. Adjust ingredients and cooking to personal taste without changing the dish's traditional character.
