Easy Tofu Vegetable Stir Fry

Ingredients

Baked tofu

  • 1 block tofu
  • 2 tsp garlic chili sauce
  • 1 tbsp tamari
  • 1 tbsp nutritional yeast

Stir fry

  • mushrooms
  • onion
  • broccoli
  • bell pepper
  • 2 tbsp water
  • tamari
  • sweet chili sauce, about 1 tbsp

Preparation

  1. Drain and press the tofu, then cut into cubes

  2. Add tofu cubes to a container and add the remaining ingredients

  3. Seal the container and shake gently to completely coat the tofu

  4. Once coated, transfer to a lined baking sheet and bake at 400°F for 20-25 minutes

  5. In a pan, add sliced mushrooms and onion. Sauté until onions are translucent

  6. Add broccoli, a splash of tamari, and 2 tbsp water

  7. Cover and cook until broccoli turns bright green, about 4-5 minutes

  8. Add bell pepper, another splash of tamari, and about 1 tbsp sweet chili sauce

  9. Sauté until vegetables are coated and most liquid cooks off, about 3 minutes

  10. Add baked tofu and coat everything together before removing from heat

Notes

  1. Serve with brown jasmine rice
