Stir Fry Noodles with Tofu and Broccoli

Ingredients

  • 2 cups cooked udon noodles
  • 1/2 tablespoon sesame oil
  • 2/3 block organic extra firm tofu, pressed and crumbled
  • 1 tablespoon dark soy sauce
  • 2 cloves garlic, grated
  • 1 cup broccoli florets, steamed until crisp-tender
  • Extra sambal to serve

Sauce

  • 1 tablespoon mirin
  • 1 tablespoon agave or maple syrup
  • Juice of half a lime
  • 3 to 4 teaspoons sambal
  • 1 tablespoon sesame oil
  • 2 tablespoons tamari
  • 1/2 tablespoon dark soy sauce
  • 1/4 teaspoon ginger powder
  • 1/4 teaspoon garlic powder

Preparation

  1. In a large pan over medium heat, add 1/2 tablespoon sesame oil.

  2. Add crumbled tofu and cook, stirring occasionally, for 8 minutes.

  3. Add 1 tablespoon dark soy sauce and grated garlic, cook for another 3 minutes, stirring often.

  4. Add cooked noodles and sauce, cook for another 2 minutes.

  5. Add broccoli and cook for 1 minute.

  6. Serve with extra sambal if you like spice.
