Air Fryer Vegan Chipotle Taquitos

Ingredients

  • 1 tbsp neutral oil, plus more for brushing
  • 2 (14-oz) cans jackfruit, large seeds removed and sliced
  • 1 (14-oz) can black beans, drained
  • 2-3 chipotles in adobo, minced + 2 tbsp adobo sauce
  • 1 small onion, diced
  • 4 garlic cloves, minced
  • 1/2 tsp dried oregano
  • 1 tsp vegan chicken bouillon
  • 16 corn tortillas
  • Salt, to taste
  • Freshly cracked black pepper, to taste

Toppings

  • guacamole
  • cilantro
  • vegan queso freso or substitute vegan feta
  • sliced lime
  • Valentina hot sauce

Preparation

  1. Heat oil in a pan on medium heat. Add onion and cook until translucent. Add jackfruit and oregano. Cook until jackfruit and onions are golden brown. Add garlic and cook until fragrant, about 1-2 minutes.

  2. Add chipotles and chipotle sauce, bouillon, and black beans, and cook for 5 minutes. Adjust seasoning and remove from pan.

  3. Heat up tortillas on a pan for 30 seconds on each side to prevent them from breaking when rolling.

  4. Fill tortillas with 2 rounded tablespoons of filling and roll up, placing them seam-side down in the air fryer in one layer. Air fry at 400°F for 10 minutes. If your air fryer has stackable racks, cook the bottom racks an additional 2 minutes to crisp up.

  5. Remove taquitos with tongs and top with toppings and enjoy.
