Air Fryer Vegan Chipotle Taquitos
Ingredients
- 1 tbsp neutral oil, plus more for brushing
- 2 (14-oz) cans jackfruit, large seeds removed and sliced
- 1 (14-oz) can black beans, drained
- 2-3 chipotles in adobo, minced + 2 tbsp adobo sauce
- 1 small onion, diced
- 4 garlic cloves, minced
- 1/2 tsp dried oregano
- 1 tsp vegan chicken bouillon
- 16 corn tortillas
- Salt, to taste
- Freshly cracked black pepper, to taste
Toppings
- guacamole
- cilantro
- vegan queso freso or substitute vegan feta
- sliced lime
- Valentina hot sauce
Preparation
Heat oil in a pan on medium heat. Add onion and cook until translucent. Add jackfruit and oregano. Cook until jackfruit and onions are golden brown. Add garlic and cook until fragrant, about 1-2 minutes.
Add chipotles and chipotle sauce, bouillon, and black beans, and cook for 5 minutes. Adjust seasoning and remove from pan.
Heat up tortillas on a pan for 30 seconds on each side to prevent them from breaking when rolling.
Fill tortillas with 2 rounded tablespoons of filling and roll up, placing them seam-side down in the air fryer in one layer. Air fry at 400°F for 10 minutes. If your air fryer has stackable racks, cook the bottom racks an additional 2 minutes to crisp up.
Remove taquitos with tongs and top with toppings and enjoy.
