Cumin-Spiced Black Bean Quesadillas with Mango Chipotle Sauce
Ingredients
- 2 almond tortillas
- avocado oil for spraying
- spinach
- black beans
- cumin
- vegan Gouda or any cheese
- avocado
Mango sauce
- 1/2 ripe mango
- 1-2 tablespoons chipotle sauce or any hot sauce
Preparation
Heat 2 almond tortillas in a pan sprayed with avocado oil on medium high, and heat spinach in the same pan while tortillas are cooking.
Mash black beans onto one side of the tortilla and add a sprinkle of cumin.
Top the beans with vegan Gouda or any cheese of choice.
Once the cheese starts melting, add the wilted spinach and mashed avocado, then fold over.
Cook for another 30 seconds or so.
Sauce blending
Blend 1/2 ripe mango with 1-2 tablespoons of chipotle sauce or any hot sauce.
