Falafel with Vegan Yogurt Dressing

Ingredients

Falafel

  • 1 can chickpeas, drained
  • 2 Tbsp ground flax seeds
  • 1/2 onion, diced
  • 3 cloves garlic, diced
  • 1 cup fresh parsley, chopped
  • 3 Tbsp garbanzo flour
  • 1 Tbsp tahini
  • 1/2 tsp paprika
  • 1/2 tsp pepper
  • 1/2 tsp cumin
  • 1/2 tsp salt
  • Garbanzo or rice crumbs to coat

Vegan yogurt dressing

  • 1/2 cup cashew yogurt
  • 1 Tbsp olive oil
  • Juice of 1 lime
  • Handful mint, chopped
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • Pepper to taste

Preparation

  1. In a food processor, blend all ingredients except for the crumbs.

  2. Scoop the thick batter and pour it into the crumbs.

  3. Coat until you are able to hold it in your hands and make balls.

  4. Cook in an air fryer at 390°F for 6-8 minutes with avocado oil spray, or fry for 2 minutes, or bake on parchment paper with avocado oil until golden brown.

Vegan yogurt dressing

  1. Mix all ingredients into a jar.
