Fried Potatoes with Pomegranate Sauce

Ingredients

  • 4 large potatoes
  • 1/2 cup pomegranate molasses
  • 1/2 cup olive oil
  • 5 cloves crushed garlic
  • 1 tablespoon crushed hot pepper
  • 1 tablespoon coriander
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 2 cups chopped parsley

Preparation

  1. Peel the potatoes, cut them into small cubes, place in salted water for a few minutes, then drain.

  2. In a deep skillet, heat the oil and fry the potatoes until golden brown. Let them cool.

  3. In a bowl, combine pomegranate molasses, olive oil, crushed garlic, crushed hot pepper, coriander, salt, and black pepper.

  4. Add the potatoes and mix well to coat with the sauce.

  5. Add the chopped parsley and mix before serving immediately.

  6. Place in a serving dish and serve immediately.
