Homemade BBQ Baked Seitan with Spices

Ingredients

  • 1 cup vital wheat gluten (@bobsredmill)
  • 2 tbsp nutritional yeast
  • 1 tsp garlic powder
  • 2 tsp smoked paprika
  • 2 tsp onion powder
  • 1 cup veggie broth
  • 1 tbsp soy sauce
  • 2 tbsp tahini or nut/seed butter of choice (peanut butter works well here too)

Preparation

  1. Combine all dry ingredients.

  2. Add in the wet ingredients and give a gentle stir to combine. A dough should begin to form.

  3. With your hands gently knead into a dough ball (do not over knead...this step should just take less than a minute to do).

  4. Transfer dough to a lined baking sheet. Flatten and spread dough out until it is 1 inch thick.

  5. Place in a preheated oven at 350F for 25 minutes.

  6. Remove from oven and brush both sides with your favorite BBQ sauce.

  7. At this stage you can either grill or rebake your seitan.

  8. If baking, bake for another 10 minutes. Then broil on high for 2 minutes to help char ends.

  9. If grilling, brush both sides of the baked seitan with BBQ sauce then place on an indoor grill and grill for 5 minutes on both sides to form grill marks.

  10. Allow to cool slightly before cutting it into strips as desired. Once made, you can cut or dice as you wish for any meals planned for the week.
