Ingredients
Dough
- 3 cups flour
- 1 teaspoon dried mint
- 1 tablespoon instant yeast
- 1 tablespoon sugar
- 1 teaspoon salt
- 1 teaspoon baking powder
- 1 large egg
- 1/4 cup corn oil
- 1 cup warm milk
Filling
- 2 tablespoons olive oil
- 1 large chopped onion
- 2 cloves crushed garlic
- 1/2 large chopped green bell pepper
- 3 large chopped tomatoes
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1 teaspoon mixed spices
- 1 teaspoon finely chopped coriander
- 1 tablespoon tomato paste
- 1 packet salami
Top layer
- 1 large egg
- 1 tablespoon toasted sesame seeds
Preparation
In the mixer bowl, place 1.5 cups of flour, add the dried mint, instant yeast, sugar, salt, and baking powder, attach the dough hook, and run the mixer on low speed for a few seconds.
Add the egg, corn oil, and warm milk, run the mixer on medium speed until dough forms, gradually add the remaining flour until the dough pulls away from the sides, and run on low speed for 5 minutes.
Shape the dough into a disk, place in an oiled bowl, cover with plastic wrap, and let rise in a warm place for 60 minutes.
For the filling, heat olive oil and onion in a large skillet over medium heat, stir with a wooden spoon until softened, add garlic, green bell pepper, tomatoes, salt, black pepper, mixed spices, coriander, and tomato paste, stir until the green pepper softens, add 1/4 to 1/2 cup of water, cover, and simmer for 10 minutes.
On a floured surface, roll out the dough to about half an inch thick.
Using a round cookie cutter, cut the dough into an even number of circles.
Place half of the circles in a shallow baking tray.
Using a large spoon, add some filling onto the circles, top with a slice of salami, cover with the remaining circles, and seal the edges tightly to prevent filling from leaking during baking.
For the top layer, beat the egg in a small bowl until well combined.
Brush the pies with the egg mixture and sprinkle with sesame seeds.
Bake in a preheated oven at 375°F for 20-25 minutes or until golden brown.
