Lentil Quinoa Salad with Zesty Dressing
Ingredients
Salad
- 1 cup quinoa, cooked
- 1 cup lentils, cooked
- 1/4 cup carrot, shredded
- 1/4 cup cilantro, chopped
Dressing
- 1 tbsp onion, finely minced
- 1/4 cup avocado or olive oil
- A pinch of salt & pepper
- 1/2 tsp garlic powder
- 1 lemon, juiced and zested (1 tsp zest)
- 1 tbsp grainy mustard
- 1/2 tbsp agave syrup
Preparation
Combine all salad ingredients together.
In a mason jar, combine and shake all dressing ingredients together.
Toss the dressing with the salad.
