Liver with Garlic and Vinegar

Ingredients

  • 500 grams liver, cubed small
  • 10 large cloves garlic, crushed
  • 1/4 cup vinegar
  • 1 small hot pepper, finely chopped
  • 1 teaspoon salt
  • 1/4 teaspoon cumin
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon mixed spices
  • 1/4 cup corn oil
  • 3 tablespoons lemon juice
  • 1 tablespoon chopped cilantro

Preparation

  1. In a deep glass bowl, place the liver, garlic, vinegar, hot pepper, salt, cumin, black pepper, and mixed spices. Mix well, cover with plastic wrap, and refrigerate for at least one hour.

  2. In a wide skillet, place the oil and heat over medium heat.

  3. Using a slotted spoon, remove the liver from the marinade and add it to the hot oil. Stir with a wooden spoon for a few minutes, then add the marinade. Reduce heat, cover, and cook for 5 minutes.

  4. Remove the cover, stir over high heat until the liquid evaporates and the liver browns. Add lemon juice.

  5. Serve in a dish, sprinkle with chopped cilantro, and serve hot.
