Make-Ahead Turkish Joker Poğaça
Ingredients
- 1 cup milk (125 ml)
- 1 cup vegetable oil (125 ml)
- 1/2 cup water (62.5 ml)
- 2 tablespoons yogurt
- 2 eggs (reserve 1 yolk for glazing)
- 1 teaspoon salt (heaped)
- 3 teaspoons sugar
- 1 teaspoon instant yeast
- 8 cups flour (1000 ml, add carefully to make a sticky dough)
For hand greasing
- 1 tablespoon vegetable oil
Filling
- 150 g white cheese
- parsley
For glazing
- 1 egg yolk (reserved)
- 1 teaspoon milk
Preparation
Reserve one egg yolk for glazing and use the remaining egg parts in the dough
In a large bowl, combine milk, vegetable oil, water, yogurt, the egg mixture, sugar, salt, and instant yeast
Gradually add flour and knead until a sticky dough forms
Grease hands with the oil for handling dough
Mix the filling ingredients and stuff into shaped dough portions
Shape the dough into poğaça forms and place on a baking sheet
Brush the shaped poğaça with the egg yolk and milk mixture for glazing
Cover and refrigerate overnight to prepare ahead
Baking
Remove poğaça from refrigerator the next day
Preheat oven to 50°C for a few minutes, then turn off and place poğaça inside for proofing for 25 to 40 minutes
Without removing from oven, set temperature to 210°C and bake for 30 minutes or until golden brown
Tips
For better rise, proof for 40 minutes if time allows
Oven temperatures and baking times may vary, so monitor closely during baking
