Pretzels or Bagels
Ingredients
- 2 1/4 tsps Instant Yeast
- 3 cups Spelt Flour (approx. 375g)
- 2 tbsps Brown Sugar
- 2 tsp sea salt
- 1/4 cup baking soda
Preparation
Place the yeast, flour, sugar and salt into a mixing bowl in that order. In a large cup, combine 150ml room temperature water with 100ml boiling water to reach the right temperature. Pour the water into the mixing bowl. Use a fork to carefully combine the water with the dry ingredients
Knead the dough for a few minutes, then cover the bowl with a tea towel and set it aside for 30 minutes
After half and hour, dust the dough with flour and let it rise for another 30 minutes.Dust a flat kitchen surface with flour
Transfer the dough onto the surface and cut it into 8 parts. Roll out each part into a strip and form a pretzel shape with them
In an ample pot, bring 4 cups of water to boil. Add the baking soda. Turn the heat down to medium so that the water continues boiling. Use a strainer or a spatula to lower each pretzel into the pot for 5 seconds, then move it straight to a lined baking tray
Sprinkle some salt and pepper on top of your pretzels and let them seat for 5 minutes while you preheat the oven to 400F. Bake the pretzels for 15-18 minutes, until the surface reaches its signature brown colour and looks glazed
