Quinoa Tabbouleh Salad with Fresh Herbs
Ingredients
- 250g cooked quinoa
- 1 large cucumber
- 4 large tomatoes
- 1 cup finely chopped mint
- 1 cup finely chopped parsley
- 3 spring onions
- Juice of 2-3 lemons
- 3 tbsp olive oil
- 2 tsp salt
Preparation
Cook 250g quinoa according to package instructions and let it cool completely.
De-seed and chop 1 large cucumber into small cubes.
De-seed and chop 4 large tomatoes into small cubes.
Finely chop 1 cup mint.
Finely chop 1 cup parsley.
Chop 3 spring onions.
In a large bowl, combine all ingredients: cooked quinoa, chopped cucumber, chopped tomatoes, chopped mint, chopped parsley, chopped spring onions, juice of 2-3 lemons, 3 tablespoons olive oil, and 2 teaspoons salt.
Mix well to ensure even distribution.
Taste the salad and adjust seasoning, adding more lemon juice if you prefer a stronger lemon flavor.
Enjoy the salad as a light meal or side dish.

Tip: Always de-seed the cucumber and tomatoes before chopping to prevent excess water in the salad.
