Tempura Onion Rings with Spicy Mayo and Teriyaki Sauce
Ingredients
- 1/4 cup rice flour
- 1/2 to 3/4 cup sparkling water
- pinch of baking soda
- 1/2 cup gluten-free panko bread crumbs
- 1 yellow onion
Spicy mayo
- 1/4 cup vegan mayo (or regular)
- 1.5 tablespoons tamari (gluten-free)
- 1.5-2 tablespoons sriracha
- 1.5 teaspoons golden monk fruit or granulated sugar
- 1 teaspoon sesame oil
Preparation
Mix the rice flour, baking soda, and sparkling water to form a smooth batter.
Slice the onion into rings.
Dip individual onion slices into the batter, let excess drip off, then coat with panko bread crumbs.
Air fry at 390°F for 15 minutes, flipping halfway through to ensure even cooking.
Mix all the spicy mayo ingredients together to create the sauce.
Serve the onion rings topped with spicy mayo, chopped scallions, sesame seeds, and teriyaki sauce.
Tips
Adjust the amount of sparkling water slowly to achieve a smooth, creamy batter consistency, as it may vary based on flour and water used.
If an air fryer is not available, bake the onion rings instead, but monitor closely as texture and cooking time may differ.
