Turkish Bulgur Kısır Salad

Ingredients

  • 2 cups fine bulgur
  • 1 cup boiling water for soaking
  • 1 heaping tablespoon red pepper paste
  • 1 heaping tablespoon tomato paste
  • 2-3 cloves garlic
  • 1 onion
  • Olive oil or vegetable oil as needed
  • Lettuce
  • Fresh green onions
  • Half bunch parsley
  • Cumin to taste
  • Salt to taste
  • Red pepper flakes to taste
  • Ground red pepper to taste
  • Black pepper to taste
  • Dried mint optional
  • Juice of 1 lemon
  • Pomegranate molasses to taste
  • Tomatoes for garnish optional

Preparation

  1. Soak the bulgur in about 1 cup of water for 10 minutes.

  2. While the bulgur is soaking, finely chop the garlic and onion and sauté in olive oil.

  3. Add the pastes and spices, cook a little longer, then turn off the heat and let it cool.

  4. Add the sauce mixture, lemon juice, and pomegranate molasses to the puffed bulgur.

  5. Finally, add the greens and mix.

  6. If available, garnish with tomatoes and serve.
