Easy Bbq Pulled Mushroom Sandwich
Ingredients
- 8 medium-sized king oyster mushrooms
- 1 1/2 tablespoons BBQ seasoning or rub
- 2 tablespoons olive oil
- Hamburger buns
- Dairy-free cheddar cheese slices
- 1/2 cup BBQ sauce or more
Toppings
- lettuce or arugula
- sliced onions
- sliced tomatoes
Preparation
Shred the king oyster mushrooms into strips.
Heat olive oil in a skillet over medium heat and add the shredded mushrooms and BBQ seasoning.
Cook until the mushrooms are browned and tender.
Stir in the BBQ sauce and heat until well combined and sticky.
Assemble the sandwiches by placing the mushroom mixture on hamburger buns, adding dairy-free cheddar cheese slices and the toppings.
