Spicy Chickpea Cheese Toasties
Ingredients
- 1 can chickpeas, drained and rinsed
- 1 small garlic clove, crushed
- 1 tsp coconut oil
- 1/2 tsp chilli
- 1 tsp cumin
- 1 tsp turmeric
- 1 tsp paprika
- Juice of 1 lemon
- Salt and pepper to taste
- Handful of shredded vegan cheese
- 4 slices of bread
Preparation
Heat 1 tsp of coconut oil in a frying pan over a medium/low heat.
Add the garlic and chickpeas and cook for a couple of minutes.
Mix in the spices, lemon juice and season with salt and pepper. Cook for another 2-3 minutes.
Brush both sides of the bread with some melted butter. Sprinkle some shredded cheese and top with the chickpeas. Sprinkle some more cheese then place the other slice of bread on top and press down.
Cook in a preheated grill for a few minutes or in a hot grill pan on each side for 2-3 minutes.
