Acai Cookie Cups

Ingredients

  • base:
  • 1/4 cup protein powder
  • 1/2 cup almond meal
  • 2 tbsp maple syrup
  • 2 tbsp almond milk
  • middle:
  • 1/2 cup frozen avocado
  • 2 frozen bananas
  • 1/4 cup almond milk
  • 2 tsp unicorn superfoods berrylicious blend or unicorn superfoods acai powder
  • 6 chocolate chip cookies (crumbled)
  • top:
  • 2 tbsp coconut oil
  • 2 tbsp maple syrup
  • 2 tbsp cacao powder
  • 1 tbsp almond milk

Preparation

  1. Mix together protein powder, almond meal, almond milk and maple syrup

  2. Flatten out into a baking tray and set in the freezer while you make the next layer

  3. Blend together frozen avocado, bananas and almond milk

  4. Add in açai powder or berrylicious blend

  5. Mix through cookie chunks

  6. Pour on top of the base layer

  7. Set in the freezer for 30 minutes

  8. Melt coconut oil and maple syrup

  9. Mix in cacao and almond milk

  10. Spread on top and enjoy!
