Nut Free Coconut Granola

Ingredients

  • 1 3/4 cups gluten-free rolled oats⁣
  • 1 cup unsweetened coconut flakes ⁣
  • 1/4 cup sunflower seeds ⁣
  • 2 tbsp chia seeds ⁣
  • 1 tbsp coconut sugar ⁣
  • 1/2 tsp sea salt⁣
  • 3 tbsp coconut oil⁣
  • 1/3 cup maple syrup⁣
  • 1 tsp pure vanilla extract⁣

Preparation

  1. Preheat oven to 160c ⁣

  2. Add oats, coconut, seeds, coconut sugar and salt to a large bowl and stir to combine

  3. Set aside

  4. In a pan (large enough to fit the oats and coconut) add the coconut oil and maple syrup

  5. Warm over a low heat for a couple of minutes, combining well

  6. Take off the heat and mix in the vanilla

  7. Add the oat and coconut mix

  8. Combine well as it’s important it’s all well coated

  9. Bake for 30 minutes stirring every ten minutes ⁣

  10. Remove from the oven, break it up into chunks and bake for a final five minutes

  11. Allow to cool completely before storing in an airtight container for up to 2 weeks at room temperature or in the freezer up to a month

  12. If you find your granola loses its crunch, five minutes in the oven will get it back

  13. Just watch is so it doesn’t burn
