Easy Plant-Based Falafel Bowl
Ingredients
- Falafel (premade mix, frozen, or homemade from chickpeas)
- Carrots
- Sweet potato
- Parsnip
- Hummus (homemade or storebought)
- Broccoli
- Mango sauce or salsa
- Pickled onion
- Tomatoes
- Sesame seeds
- Tahini
Preparation
Cook the falafel according to the package or recipe instructions.
Peel and cut the root vegetables into fry shapes.
Drizzle oil, salt, pepper, and chili flakes over the vegetables.
Air fry at 200°C for 20-23 minutes or bake in the oven at 220°C for 30-35 minutes.
Boil the broccoli until tender.
Dice the vegetables for the salsa.
Prepare the mango salsa, either homemade or store-bought.
Combine all ingredients in a bowl and serve.
