Colorful Vegan Bowl with Garlicky Sauce

Ingredients

  • Sweet potato
  • Carrots
  • Salt
  • Oil
  • Canned chickpeas
  • Tomatoes
  • Cucumber
  • Seitan pieces
  • Salted almonds or other nuts

Garlic dressing

  • 3-4 tablespoons Turkish yogurt (vegan, e.g., Oatly)
  • 3 garlic cloves, roasted
  • Drizzle of syrup
  • Drizzle of lime juice
  • Salt
  • Pepper
  • Optional dried mint

Preparation

  1. Roast garlic cloves in the oven with a little oil and salt until soft.

  2. Airfry sweet potato and carrots with some salt and oil at 200°C for about 25 minutes.

  3. Open a can of chickpeas.

  4. Chop tomatoes and cucumber.

  5. Fry seitan pieces until cooked.

  6. Mix together the garlic dressing ingredients.

  7. Assemble the bowl with all components and serve.

Tips

  1. Marinate the chickpeas in a herb marinade in advance for extra flavor.
