Homemade Perfect Pita Bread
Ingredients
- 500 g all-purpose flour
- 300 ml water
- 10 g salt
- 3.5 g dry yeast
- 2 tbsp olive oil
- 50 g sourdough discard (optional)
Preparation
Mix flour, water, salt and yeast into a shaggy dough. Let it rest for 15 minutes, then add the oil and knead until relatively smooth.
Cover and rest for 30 minutes then do 1 set of stretch and folds. Cover and rest until doubled or tripled in size for about 1-2 hours. You can also let it rest in the fridge overnight.
Remove from the bowl, cut into 6-8 even pieces and shape each piece into a ball. Place on a tray, cover with cling film or a wet towel and proof for 1-3 hours.
Preheat oven to 250°C.
Dust with flour, roll each ball into a 5 mm thick disc and place on a baking tray.
Bake for 8-12 minutes until puffed, and just lightly browned.
Wrap in a kitchen towel and let them steam for at least 30 minutes.
Tips
You can also bake the bread directly on the grill, though it may not puff in the same way.
