Mini Blueberry Lemon
Ingredients
- 1 cup coconut sugar
- 2 eggs (use flax if vegan)
- 3 bananas
- 2 cups gluten free flour
- 1/2 tsp salt
- 1 1/2 cups fresh blueberries
- 1 stick butter (I used nondairy)
Preparation
Bake at 350 for 20 minutes rotating half way
While baking, make the frosting by whipping together a drained can of coconut cream, 1/8 cup maple syrup, and 1 tsp of vanilla
Frost once the cute mini loaves are completely cool
