Mini Blueberry Lemon

Ingredients

  • 1 cup coconut sugar
  • 2 eggs (use flax if vegan)
  • 3 bananas
  • 2 cups gluten free flour
  • 1/2 tsp salt
  • 1 1/2 cups fresh blueberries
  • 1 stick butter (I used nondairy)

Preparation

  1. Bake at 350 for 20 minutes rotating half way

  2. While baking, make the frosting by whipping together a drained can of coconut cream, 1/8 cup maple syrup, and 1 tsp of vanilla

  3. Frost once the cute mini loaves are completely cool
