Pumpkin Paleo Sweet Potato Waffle

Ingredients

  • 1 cup mashed sweet potato
  • 1 egg
  • 1/2 scoop furtherfood collagen
  • 2 tbsp coconut flour
  • 1/4 cup unsweetened almond milk
  • 1 tsp cinnamon
  • 1 tsp pumpkin pie spice

Toppings

  • coconut oil
  • bananas
  • cinnamon
  • dairy free chocolate chips
  • plain yogurt
  • organic peanut butter

Preparation

  1. Bake a medium sweet potato in advance and mash it to yield 1 cup; store it for use later.

  2. Combine all waffle ingredients in a bowl to form the batter.

  3. Cook the batter in a waffle maker for 10 minutes, ignoring the light indicator.

  4. For caramelized bananas, heat a pan over low to medium heat with a little coconut oil.

  5. Add bananas to the pan, sprinkle with cinnamon, and cook for 30 seconds on each side.

  6. Top the cooked waffle with dairy-free chocolate chips, plain yogurt, organic peanut butter, and the caramelized bananas.

  7. Adjust the amount of pumpkin pie spice in the batter if a stronger pumpkin flavor is desired.
