Pumpkin Paleo Sweet Potato Waffle
Ingredients
- 1 cup mashed sweet potato
- 1 egg
- 1/2 scoop furtherfood collagen
- 2 tbsp coconut flour
- 1/4 cup unsweetened almond milk
- 1 tsp cinnamon
- 1 tsp pumpkin pie spice
Toppings
- coconut oil
- bananas
- cinnamon
- dairy free chocolate chips
- plain yogurt
- organic peanut butter
Preparation
Bake a medium sweet potato in advance and mash it to yield 1 cup; store it for use later.
Combine all waffle ingredients in a bowl to form the batter.
Cook the batter in a waffle maker for 10 minutes, ignoring the light indicator.
For caramelized bananas, heat a pan over low to medium heat with a little coconut oil.
Add bananas to the pan, sprinkle with cinnamon, and cook for 30 seconds on each side.
Top the cooked waffle with dairy-free chocolate chips, plain yogurt, organic peanut butter, and the caramelized bananas.
Adjust the amount of pumpkin pie spice in the batter if a stronger pumpkin flavor is desired.
