Turkish Açma Bread Rolls

Ingredients

  • 2 cups warm water
  • 1 cup liquid oil
  • 1 tablespoon dry yeast
  • 3 tablespoons sugar
  • 1 tablespoon salt
  • 2 eggs (reserve one yolk for topping)
  • flour as needed

For spreading

  • room temperature butter

Preparation

  1. Dissolve yeast and sugar in warm water and wait for it to foam

  2. Add oil, egg (reserving one yolk for later), salt, and gradually add sifted flour to make a soft dough that does not stick to hands

  3. Let the dough rise until doubled in size, about 1 hour

  4. Divide the dough into 24 equal pieces

  5. Spread each piece with a teaspoon of softened butter and roll into a log shape

  6. Optionally twist two rolls together

  7. Brush with the reserved egg yolk and sprinkle with sesame seeds

  8. Let rise for another 50 minutes

  9. Bake in a preheated oven at 190°C until golden brown

Tips

  1. This recipe makes enough for two trays

  2. Can be stored in the freezer

  3. No milk is used; the dough is made with water
