Vegan Flourless Blueberry Breakfast Bread Made in Blender

Ingredients

  • 3 cups old fashioned oats
  • 1/4 cup maple syrup
  • 1 tsp baking powder
  • 1 tsp apple cider vinegar
  • 1 egg replacer (1 tbsp Bob's Red Mill egg replacer and 2 tbsp water, or a flax egg)
  • 1/4 cup room temperature coconut oil
  • 1.5 cups unsweetened vanilla almond milk

Add-ins

  • 1 cup blueberries or 1/2 cup chocolate chips

Preparation

  1. Blend all ingredients except the add-ins in a blender.

  2. Fold in 1 cup blueberries or 1/2 cup chocolate chips.

  3. Bake at 350 degrees for 42 minutes.

  4. Allow to cool and enjoy.
