Easy and Delicious Chocolate Chip Walnut Muffins

Ingredients

  • 1 cup almond flour
  • 1/3 cup oat flour
  • 1 tsp baking powder
  • 1 tsp apple cider vinegar
  • 1/4 cup room temperature coconut oil
  • 2 tbsp peanut butter
  • 1/4 cup maple syrup
  • 1/3 cup unsweetened vanilla almond milk
  • 3/4 cup walnut pieces
  • 1/2 cup vegan chocolate chips

Preparation

  1. In a bowl, mix all the ingredients except the walnut pieces and chocolate chips.

  2. Fold in the walnut pieces and vegan chocolate chips.

  3. Place the batter in parchment paper muffin cups to avoid sticking and falling apart.

  4. Bake at 350 degrees for 30 minutes.

  5. Cool down and enjoy. Makes 8 medium-large cupcakes.
