Banana Muffins
Ingredients
- 3 large bananas
- 1 large egg, room temperature
- 1 teaspoon baking soda
- 1 teaspoon vanilla extract
- 100 grams granulated sugar
- 75 grams palm sugar
- 192 grams all-purpose flour
- 80 milliliters vegetable oil
- 50 milliliters liquid milk
Preparation
In a large bowl, mix the flour and baking soda. Set aside.
In another large bowl, stir the bananas, granulated sugar, and palm sugar until combined. No need to make it smooth.
Gradually add the egg, oil, milk, and vanilla extract while continuing to stir.
Add the flour mixture gradually and stir just enough.
Pour the batter into muffin tins lined with paper.
Bake in a preheated oven at 185°C for 18-22 minutes or until done. Test with a toothpick.
Remove from oven, let cool for about 10 minutes, then remove muffins from tins.
