Steamed Banana and Bread Pudding
Ingredients
- 400 ml coconut milk
- 3 pandan leaves
- A pinch of salt
- 50 grams white sugar
- 30 grams palm sugar, finely grated
- 1 egg
- 3-4 bananas
- 2 slices of white bread
Preparation
Cook the coconut milk with one knotted pandan leaf, salt, white sugar, and palm sugar, stirring until it boils. Remove and let it cool.
After cooling, add the egg and whisk until smooth, then add the cut pandan leaves.
Arrange the cut bananas and bread in banana leaves or ramekins, and pour the coconut milk mixture over them.
Steam until cooked, about 20 minutes.
Remove and serve warm or cold.
