Sweet Pandan Kuih Cara

Ingredients

  • Pandan leaves (more for better flavor)
  • 2 cups water
  • 1 box coconut milk (200ml)
  • 2 eggs
  • 3 cups flour
  • A pinch of salt
  • Sugar

Preparation

  1. Cut pandan leaves and blend with 2 cups water, then strain

  2. Add 2 eggs, 1 box coconut milk, 3 cups flour, a pinch of salt, and the strained pandan water mixture, then blend again and strain

  3. Heat the mold on low heat and brush with oil, ensuring no oil pools

  4. Pour the batter without overfilling, add sugar, and cover

  5. Cook for 3 to 5 minutes, no need to flip

  6. Serve when done

Tips

  1. If pandan leaves are unavailable, use pandan essence

  2. For a brighter green color, add pandan green food coloring

  3. Adjust consistency as needed; add water if the mixture is too thick
