Shrimp and Noodle Soup
Ingredients
- 1 tablespoon oil
- 1 tablespoon minced ginger
- 2 stalks celery, thinly sliced
- 1 small onion
- 1 small chili pepper, chopped
- 1/4 teaspoon salt
- 4 cups broth
- 1/2 cup noodles
- 1/2 cup cooked peas
- 300 grams coarsely chopped shrimp
For serving
- Lemon quarters
Preparation
In a deep pot, add the oil and place it over medium heat.
Add the ginger and stir with a wooden spoon until its aroma rises.
Add the celery, onion, chili pepper, and salt. Stir until the onion softens, then add the broth and let it boil for 15 minutes.
Add the noodles, peas, and shrimp. Cook the soup for 10 minutes.
Pour the soup into a deep serving bowl and serve with lemon quarters.
