Fried Shrimp and Rice
Ingredients
- 3 cups basmati rice
- 1 kilogram medium-sized shrimp
- 3 tablespoons flour
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 1 large egg
- 1 cup corn oil
- 3 cloves garlic, sliced
- 1 tablespoon chopped ginger
- 1 chili pepper, sliced
- 1/4 cup soy sauce
Preparation
In a deep pot, place a generous amount of water, add a tablespoon of salt and a tablespoon of corn oil, place the pot on medium heat to boil the water vigorously, add the rice and let it boil for 7 minutes or until the grains open, then drain the rice.
In a deep bowl, place the shrimp, flour, salt, pepper, and egg, then mix the shrimp to coat well with the ingredients.
In a wide skillet, place the oil, heat it on medium heat, add the shrimp and fry until golden brown, then remove from the oil and place in a side dish.
To the same oil, add the garlic, ginger, and chili, stir with a slotted spoon for a minute or until golden brown, then remove with a slotted spoon and add to the shrimp.
In a medium-sized pot, place 3 tablespoons of the shrimp frying oil, add half the rice, spread the shrimp and the onion, add the remaining rice, and spread the soy sauce.
Cover the pot and cook on low heat for 30 minutes until the rice is steamed.
