Tasty Raw Vegan Apple Pie

Ingredients

Crust

  • 1 1/2 C Shredded coconut or pecans or almonds
  • 1/2 C Date paste or soaked dates
  • 1/2 tsp Cinnamon
  • Pinch Salt

Filling

  • 5 Fuji apples, large (cored)
  • 1 Fuji apple (cored and thinly sliced)
  • 1 1/2 T Psyllium
  • 1tsp Lemon juice
  • 1 tsp Cinnamon
  • 1/2 C Raisins

Preparation

  1. If using nuts for the crust, use S-blade in food processor to chop them until it begins to clump. Add remaining crust ingredients and mix.

  2. Press the crust mixture into a 9” pie pan.

  3. Pulse 5 apples in food processor, leaving some texture. Squeeze out excess moisture.

  4. Add lemon juice, cinnamon, psyllium, and raisins to the apple mixture and mix briefly.

  5. Add the filling mixture into the crusted pie pan and press firmly.

  6. Top with sliced apples and sprinkle cinnamon over the top.

  7. Refrigerate the pie.
