Vegan Lemon and Blueberry Muffins

Ingredients

  • 2 and 1/3 cup almond flour
  • 1/3 cup peanut butter
  • 1 tbsp vanilla extract
  • 3 tbsp maple syrup
  • 1 tsp baking powder
  • 1/3 cup unsweetened vanilla almond milk
  • 1/4 cup fresh lemon juice
  • one cup fresh blueberries

Preparation

  1. In a bowl, mix the ingredients together.

  2. Fold in the fresh blueberries.

  3. Bake medium size muffins at 375 degrees for 30 minutes.
