Vegan Lemon and Blueberry Muffins
Ingredients
- 2 and 1/3 cup almond flour
- 1/3 cup peanut butter
- 1 tbsp vanilla extract
- 3 tbsp maple syrup
- 1 tsp baking powder
- 1/3 cup unsweetened vanilla almond milk
- 1/4 cup fresh lemon juice
- one cup fresh blueberries
Preparation
In a bowl, mix the ingredients together.
Fold in the fresh blueberries.
Bake medium size muffins at 375 degrees for 30 minutes.
