Brazilian Honey Bread Cake
Ingredients
- 2 eggs
- 1 can condensed milk
- 1 cup milk
- 1 cup honey
- 1 cup brown sugar
- 3 tablespoons cocoa powder
- 1 teaspoon ground cloves
- 1 teaspoon ground cinnamon
- grated nutmeg
- 1 cup nuts (optional, can use less)
- 1 teaspoon baking soda
- 1 tablespoon baking powder
- 3 cups all-purpose flour
Filling
- 2 cans cooked condensed milk or 800 grams ready-made dulce de leche
Covering
- 1 box heavy cream
- 250 grams semi-sweet chocolate, chopped
Syrup
- 1 cup water
- 1 tablespoon sugar
- 1 cinnamon stick or 1 tablespoon ground cinnamon
Preparation
Prepare the syrup by heating water, sugar, and cinnamon in the microwave for 3 minutes
Prepare the ganache by heating heavy cream in the microwave for 1 minute, then add chopped chocolate and stir until melted; if necessary, heat for an additional 10 seconds in the microwave
Place all ingredients in a blender except flour, baking soda, and baking powder, and blend well
Add the flour, baking soda, and baking powder and blend briefly, then mix with a spoon to combine
Pour the batter into a greased 30 cm diameter pan
Bake in a preheated oven at 180°C for 40 minutes or until a toothpick inserted comes out clean
Allow the cake to cool slightly and then unmold it
Cut the cake in half and drizzle with the prepared syrup
Add the filling between the cake layers
Cover the cake with the prepared ganache
Tips
The nuts are optional and the amount can be adjusted based on preference
If the ganache does not melt completely, add more microwave time in 10-second intervals
