Cherry Cake with Orange and Vanilla

Ingredients

  • about 20 cherries
  • 1.5 cups flour
  • 1.5 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon starch
  • 2 large eggs
  • 3/4 cup sugar
  • 1/2 cup butter, melted and warm
  • 1 teaspoon orange zest
  • 1/3 cup warm milk
  • 1 teaspoon vanilla extract

Preparation

  1. Preheat the oven to 180°C. Prepare a 9-inch round cake pan by greasing it with vegetable shortening or butter and lining the bottom with parchment paper. Set aside.

  2. Sift the flour, baking powder, salt, and starch onto a piece of paper and set aside.

  3. In a mixer bowl, place the eggs and sugar. Attach the whisk attachment and beat on medium speed for 2-3 minutes until the mixture is fluffy and light.

  4. Add the melted butter and warm milk, stir gently until incorporated.

  5. Add the flour mixture and stir until just combined; do not overmix.

  6. Pour the batter into the prepared pan and smooth the surface. Place half of the cherries on top.

  7. Bake for about 15 minutes until slightly puffed. Remove from oven and quickly add the remaining cherries on top.

  8. Continue baking for 20-25 minutes until the cake is done and the surface is browned.

  9. Remove the cake from the oven, let it cool slightly in the pan, then remove it.
