Lemon and Orange Zest Cake with Orange Sauce
Ingredients
- 2 1/2 cups flour
- 4 teaspoons baking powder
- 1/4 teaspoon salt
- 1 cup sugar
- 1 tablespoon lemon zest
- 1 tablespoon orange zest
- 4 large eggs
- 1 teaspoon vanilla extract
- 3/4 cup oil
- 1/2 cup yogurt
- 2 tablespoons lemon juice
Orange sauce
- 1 cup fresh orange juice
- 2 tablespoons sugar
- 1 tablespoon starch
Garnish
- Powdered sugar
Preparation
Set the middle rack in the oven and preheat to 170°C.
Prepare a glass cake mold by greasing with butter and dusting with flour.
In the mixer bowl, combine sugar, lemon zest, and orange zest and rub with fingertips.
Add eggs and vanilla and beat with a whisk until light and combined.
Add oil in a thin stream while continuing to beat.
Add yogurt and lemon juice and beat until mixed.
Add flour and mix with a wooden spoon or hand whisk until combined.
Pour the batter into the mold.
Bake in the oven until the cake is done.
Orange sauce
In a saucepan, combine orange juice, sugar, and starch and stir to dissolve.
Heat over medium heat, stirring continuously, until it boils.
Let it cool and serve with the cake.
Garnish
Dust the cake with powdered sugar.
