Homemade Orange Cake with Fresh Orange
Ingredients
- 2 cups flour
- 1 tablespoon baking powder
- 5 large eggs
- 1 tablespoon vinegar
- 1 1/2 cups sugar
- 1 teaspoon vanilla extract
- 2/3 cup oil
- 1 large orange
Preparation
Set the middle rack in the oven and preheat to 180°C
Prepare a round bundt pan by greasing with butter and dusting with flour, then set aside
Sift the flour and baking powder, then set aside
Zest the orange directly over the flour mixture, then set aside
Squeeze the orange to obtain 1/2 cup of juice; if less, add water
In a bowl, place the eggs and vinegar, and beat with an electric mixer until frothy
Add the vanilla and sugar, and continue beating on high speed for a few minutes until the mixture is light and thickened
Add the oil in a thin stream while continuing to mix until incorporated
Alternately add the flour mixture and orange juice, and mix until smooth and well combined
Pour the batter into the prepared pan
Bake for 45-50 minutes until golden brown
Remove from the oven, let cool in the pan for 5 minutes, then remove the cake and cool completely on a rack
