Classic Carrot Cake with Chocolate Frosting
Ingredients
Batter
- 3 large carrots
- 3 eggs
- 1/2 cup vegetable oil
- 3 cups sugar
- 3 cups all-purpose flour
- 1 tablespoon baking powder
Frosting
- 1 can sweetened condensed milk
- 4 tablespoons chocolate powder
- 2 tablespoons margarine
- sprinkles for decoration (optional)
Preparation
In a bowl, combine the sugar and flour, mix well and set aside
In a blender, combine the carrots, eggs, and oil. Blend until smooth. Gradually add to the bowl mixture, then mix in the baking powder
Pour into a greased and floured pan and bake for about 25 minutes, or until a toothpick inserted comes out clean
Frosting
In a saucepan, combine the sweetened condensed milk, chocolate powder, and margarine (excluding the sprinkles). Cook over medium heat, stirring constantly, until it reaches a soft fudge-like consistency. Pour over the baked cake and top with sprinkles
