Classic Carrot Cake with Chocolate Frosting

Ingredients

Batter

  • 3 large carrots
  • 3 eggs
  • 1/2 cup vegetable oil
  • 3 cups sugar
  • 3 cups all-purpose flour
  • 1 tablespoon baking powder

Frosting

  • 1 can sweetened condensed milk
  • 4 tablespoons chocolate powder
  • 2 tablespoons margarine
  • sprinkles for decoration (optional)

Preparation

  1. In a bowl, combine the sugar and flour, mix well and set aside

  2. In a blender, combine the carrots, eggs, and oil. Blend until smooth. Gradually add to the bowl mixture, then mix in the baking powder

  3. Pour into a greased and floured pan and bake for about 25 minutes, or until a toothpick inserted comes out clean

Frosting

  1. In a saucepan, combine the sweetened condensed milk, chocolate powder, and margarine (excluding the sprinkles). Cook over medium heat, stirring constantly, until it reaches a soft fudge-like consistency. Pour over the baked cake and top with sprinkles
