Brazilian Chocolate Brigadeiro Cake

Ingredients

For the cake

  • 2 cups sugar
  • 4 eggs (yolks and whites separated)
  • 3/4 cup vegetable oil
  • 3/4 cup chocolate powder
  • 3/4 cup warm water
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder

For the syrup

  • 200 ml chocolate liqueur
  • 100 ml water
  • 3 tablespoons sugar

For the filling and frosting

  • 2 cans sweetened condensed milk
  • 5 tablespoons chocolate powder
  • 2 tablespoons margarine
  • 200 g chocolate sprinkles

Preparation

  1. Prepare the batter by beating 2 cups sugar with the yolks, then add the oil, 3/4 cup chocolate powder dissolved in warm water, and finally the flour.

  2. Beat the batter well, remove from the mixer and fold in the whipped egg whites.

  3. Mix gently and add the baking powder.

  4. Bake in a greased and floured pan in a preheated oven at 180Β°C.

  5. Prepare the syrup by mixing chocolate liqueur, water, and 3 tablespoons sugar in a pan and bring to a boil. Let it cool.

  6. Unmold the cake and cut it in half.

  7. Poke holes in the cake with a fork and drizzle with the syrup.

  8. Prepare the filling and frosting by mixing sweetened condensed milk, 5 tablespoons chocolate powder, and margarine in a pan and cook until thickened, stirring constantly. Ensure it remains soft in consistency.

  9. Fill and cover the cake.

  10. Sprinkle with chocolate sprinkles.
