Carrot Cake with Chocolate Fudge Frosting
Ingredients
Cake batter
- 4 eggs
- 3 chopped carrots
- 1 cup vegetable oil
- 2 cups sugar
- 3 cups all-purpose flour
- 1 tablespoon baking powder
For pan
- margarine
- flour
Frosting
- 2 cans sweetened condensed milk
- 2 tablespoons unsalted margarine
- 1 cup cocoa powder
- 1/2 can (150g) heavy cream
Preparation
Cake
Blend eggs, chopped carrots, vegetable oil, and sugar in a blender at medium speed
Transfer to a bowl and mix in flour and baking powder with a spoon
Pour batter into a small greased and floured pan
Bake in a preheated medium oven for 30 minutes or until a toothpick inserted in the center comes out clean
Frosting
Combine sweetened condensed milk, unsalted margarine, and cocoa powder in a saucepan over medium heat
Cook, stirring, until the mixture pulls away from the bottom of the pan
Remove from heat and stir in heavy cream until smooth
Remove cake from oven and spread frosting
Let cool and serve
